heal.abstract | Reversed phase-HPLC (RP-HPLC) of caseinomacropeptide (CMP) was used for the detection of bovine milk in caprine milk after treatment with rennet. Caprine and bovine milk mixtures were heated in two different ways (73°C for 15 s and 85°C for 3 min). Caprine and bovine CMPs were well resolved from each other by RP-HPLC analyses of fractions soluble at pH 4.4. In the caprine milk profile, there was an interfering peak with characteristics similar to that of bovine CMP. However, bovine CMP peak area and height expressed relatively to those of caprine CMP allowed the detection of 2.5% added bovine milk. The estimated percentages were significantly linearly correlated with bovine milk percentages. The intensity of heat treatment did not significantly affect the results. | en |
